I used normal Windex on my truck not too long ago before reading about how ammonia can cause issues with stainless steel. In your opinion after one use of Windex, should I be concerned about oxidation?
No worries, it will gradually return to normal, or you can speed it up with a wipe-down with a very dilute citric acid solution. Make your own or use Citrisurf.

Which sprayaway do yall use? I saw a can at walmart but it said "oil based" exactly like the can below. I assume I need the one the says "ammonia free" ?

I’ve convinced myself that keeping fingerprints off the CT is going to be a vicious cycle that will never end. Tested over a dozen products ranging from Stainless Steel cleaners to BKF. Most work, but some just don’t really “clean” the oils off the surface without using a hellacious amount of effort. A friend of friend of a friend is a appliance repairman and without even asking him he said “ Use Sprayway on that thing”. He swears by it. After finishing his repairs he sprays them down, wipes it off and gives it final buff with a micro-finer towel. So into the back of his van he goes and retrieves a bottle with a pack of Costco Micro-fiber towels. Gives it a shake and proceeds to spray the hood with a fine mist. Wipes it down and follows with a clean towel to buff off the excess. Honestly the cleanest this truck ever looked. Got me a few bottles at Home Depot and proceeded to finish the truck in 10 minutes. This is not a “Sponsored” post, just an honest opinion. Give it a whirl, you will be pleasantly surprised.

Just tried Sprayway on my 3 day old 2025 Cybertruck. It doe not seem to remove fingerprints at all. I used the non-amonia foaming version. See video.
That's the manufacturing oils preventing the metal from self-passivating. The solution is simple:

Wash it with a bucket of warm, soapy water and rinse well. I recommend Dawn or Lemon Joy dish soap. This will remove the manufacturing oils and let the moisture and oxygen get to the surface of the metal and start the passivation process. You can speed it up by wiping it down with CitraSurf 77 or a solution of citric acid.

After it passivates the fingerprints will be less problematic and they will wipe right off with Sprayway Glass Cleaner.
