We travel a lot with a trailer and I've upgraded to an even larger trailer 20' alum with front box. It will carry 1 stand up jetski, 2 large can-am 4 wheelers and an 11k generator. Im buying the generator just for back-up along these long road trips (i also have a urander bed cap so my milage is pretty crappy). Theres times I get sketched about making it to the next SC. So, if im getting a generator that can charge at 50amps, I'd like a charger that can run the 48amps the truck will limit it to. at 32amps the tesla charger would just be really slow. The generator will have a 14/50 plug and i have every adapter you can imagine already for campgrounds. So, does anyone have actual experience with a portable charger running close to 50 amps?

Charging at 48A from a 14-50 violates the NEC and isn't recommended. That's why wall connectors are set to only ouput 40A instead of 48A when they replace a 14-50 outlet.
Jowua sells a 40A mobile connector with 14-50.
You will also need to make sure neutral and ground are bonded.

i didn't even think of that lol... yeah, it will be bonded, and i guess 40amps is still better than 32 amps, 25% faster charging.

Would you mind sharing what kind of generator you’d be using, what fuel it runs on, how much you intend to carry and how many miles do you expect to get from charging off the generator? Also, and sorry for my ignorance, what does “bonding “ mean and how do you provide for that? Thanks in advance.

In normal split phase power, the neutral and ground are connected together at one point usually at the service entrance, this is the bonding point. The charge connector verifies that the ground wire is connected by flowing a small current through it. If the generator ground/chassis isn't bonded/connected to neutral, then the phase lines aren't either and this check will fall.
Generator manuals call out how to bond or isolate, or there are third party options to connect neutral to ground.

im planning on a westinghouse 11k generator i will just use gasoline in. It is seriously just for back-up. i have a 20' long aluminum car hauler with a large front box and rock guard, dual axle. i'll have the gen up front, gas cans, a stand=up jetski first sideways, then 2 can am outlander 700's... our first trip with this set up will be from Dallas to Silverlake dunes in Michigan. I keep gas cans on the trailer for the 4 wheelers anyway, so it's nothing extra there. I think I'll get about 100-120 miles at 100% with this trailer unless i go really slow (like 60mph). It will be a ton of stops every day, but a week in the dunes with quads is worth it.. Bonded is for the ground. it's basicly a way it's wired. Some are frame bonded, some not, if not, you can just buy a bond plug and plug it into one of the 110v outlets..

Not sure which version you are looking at but the Gen11000DFc has a bonded neutral, and is rated for 9k continuous (37.5A).
We took our Cybertruck on the Silver Lake Dunes in 2024 along with two others. It was a blast, but chews through energy. Used the stock all terrain tires aired down to 15 psi.
That trailer and load a fairly low profile, it will be interesting to see what your Wh/mile is. There are two Superchargers nearish the Dunes, plus campsite power options.

If I had a similar size generator in the bed of my CT and approx 10 gallons of gas - how many miles do you think I could add to the Cybertruck range if I was stuck between charging stations?

It calls out 17 hours on 8 gal at 25%, which is 47kWh or ~35% SOC. So 10 gallons at higher power would likely get you over 100 miles. This is a dual fuel unit, so you could use propane instead if you don't need gasoline for other things.
