Arizona-
Schnebly hill road. One of my favorites for escaping the Phoenix heat because of the altitude. Easily doable as a day excursion. Runs from Sedona to flagstaff or the other way I suppose. Spectacular views.
Manageable for beginner off-roaders in my opinion. Very bumpy so 36 psi makes it more comfortable/ fun for the whole family.

Four peaks trail- beautiful escape close to Phoenix. Easy. Spectacular views of lake Roosevelt. Works well as a loop with the salt river trail heading back to Phoenix.

In the center of Orange County, California is Santiago Peak at around 5500 feet. The views are nice. You can see Catalina Island, Downtown LA, Mounts Baldy and Wilson, Big Bear, but only if the air is clear. It takes over an hour of dirt road with some obstacles to get to the top. I deflated to 20 and it was smooth. My average speed was 12 mph.
