Is there some way to toggle a setting to respond to a group text using the voice prompt? It only seems to reply to the sender and not everyone in the group.

I haven't seen that to be the case. - Android Pixel phone user.

No. Tesla doesn't handle group chats well.

I’ve got an iPhone. I never knew it was happening until my wife asked me why I wasn’t responding (when I was).

This is maybe the one thing CarPlay does better that Tesla is way behind on. Someone tell Elon.

Yeah, it's always been an issue, at least for iPhone, which is normally Tesla's sweet spot. Like @Hammy60 said, this (and Waze) is where Carplay would be useful.
